Beet & Blue Cheese Casserole
Ingredients
- 1 lb beets, peeled and shredded
- 1 red onion, diced
- 1 cup crumbled blue cheese
- 1 cup light cream
- Salt and Pepper
Preheat the oven to 350 degrees. Spray a shallow casserole dish with cooking spray. Add the beets, onion, salt and pepper, and toss. Top with the cheese and cream. Bake 1 hour.
